Defiance Distillery was first launched by Paul Sheerin in 2017, allowing him an outlet for his passion for food and drink. Paul’s love was realised when he travelled the world during his 20s, allowing him an opportunity to try cuisines and drink concoctions from all different cultures and continents.
Defiance is a distillery which doesn’t follow convention. Crafting unique spirits with eye-catching designs, they have become well known in their area at the foothills of Oldham/Saddleworth. But, not only are Paul and his team locally known, they are recognised internationally and have been awarded a number of impressive accolades. Winners of the San Francisco World Spirits Best in Show 2020. Their creation Defiance Navy Strength won the ‘Best in Show, Unaged White Spirit’ category in what is one of the oldest and most prestigious competitions of its type in the world!
Amongst the award winning Navy Strength are many other wonderful gin creations. One of their latest is Café Seville which has been described as a fresh new take on an espresso spirit distilled with sweet Seville oranges.
To try for yourself, the Distillery is open on Friday nights as a gin experience bar and becomes host to the Defiance Gin Academy on Saturdays. This allows the team to share their passion with the wider public! The Gin Academy is open to visitors and includes a tour and tasting experience. For gin lovers, Defiance Distillery is certainly the place to pop on your ‘must-visit’ list for 2023.
